Before heading offshore Hayden cooked in some of Auckland’s most exciting kitchens - The French Cafe, Meredith’s and Vinnies - he also headed the kitchen team at Parnell’s TriBeCa. Then, tapped by Tony Stewart restauranteur of Clooney fame, Hayden headed to successful America’s cup pop up The Waiheke Island Yacht Club in San Francisco. More recently he earned one hat as head chef of The Roving Marrow in Melbourne’s Astor Hotel.
Etta is now Hayden’s passion. His food is produce driven, casual in approach. He draws inspiration and influence from the multi cultural melting pot that is Melbourne. Think Greek. Italian. Think Middle Eastern. Asian. Think Delicious.
To match Hayden's food we will be curating an all Australian, all natural wine list with Dan Gillet from Wine Diamonds.
